At recent & much needed girls night out, my tribe shared an appetizer of spinach and artichoke dip. I LOVE some cheesey gooey goodness. But what made this dip even more amazing was the fresh spinach leaves. You know how most spinach dip uses that shredded, previously frozen spinach? Kona’s dip used whole fresh greens! I decided to try to recreate the dip myself using whole foods and make it 21 Day Fix friendly. The results was a whopping success! It was perfect and the husband gave it a 5 star review!
Spinach (1 cup)
Jar of artichoke hearts
Greek yogurt (1 container)
Cream cheese (1 ounce softened)
Mozzarella, shredded (1 tablespoon)
Parmesan, grated (1 tablespoon)
Preheat oven to 400 degrees
Mix all ingredients together in oven safe dish
Bake for 20 minutes or cheese is melted
Place under broiler for 3-4 minutes to brown
Serve with crackers, veggies, a spoon!
