These last few weeks of summer have taken a toll on my meal planning routine. The unpredictability of our summer schedule has caused me to lose sight of what works for my family. I NEED a good meal plan to avoid the drive through or pizza delivery man. So today, it’s back to the basics. Here’s what we plan on…what we WILL be eating this week! I’ve noted where our kids will eat something other than what I prepare for my husband and me. Almost always, my children know they are expected to eat what is served to them but occasionally I do make an exception!

Meal Plan

Monday:   Zucchini “pizzas” with homemade meatballs and salad. Will serve whole wheat pasta for the kids.

Tuesday: Tilapia, roasted red potatoes, green beans

Wednesday: Whole chicken, steamed broccoli and rolls

Thursday: Thai Chicken Salad with Spicy Peanut Sauce from My Kitchen Escapades

Looks like a perfect recipe to use the leftover chicken from Wednesday!

Kids will have chicken, rice and leftover veggies

Friday: Swim Team Party- dinner provided

Saturday: BLTs with corn on the cob

Lunch and Snack Ideas

Quinoa pizza bites – Still trying to get the kiddos on board with some quinoa! Anyone have kid approved recipe?

Peanut butter French toast– Will try out this recipe with some vanilla Shakeology

Homemade granola to use in yogurt & fruit parfaits

Almond butter and jelly rollups on Flatout Breads- These were a sample at Costco and my kids are OBSESSED!

Triple chocolate muffins– a tried and true family favorite!

Lettuce wraps- a quick and easy lunch

3 ingredient Peanut butter/Pumpkin Dog treats– Mama’s got another mouth who needs some wholesome snacks!
