Another week is starting and time to get out that cookbook (yes I still use some actual cookbooks), browse my Pinterest recipes and “keepers” board and plan our weekly menu!
I am finishing the 3 Day Refresh from Beachbody. Our nutrition has been off lately so my husband and I took these last three days to get back to basics and I feel AMAZING! Incredibly, my husband has gone vegan for these last three days. He’s a true MIdwestern “meat and potatoes” kind of guy so this was a HUGE feat for him. Anyhoo…on to the meal plan:
Monday: Veggie soup and grilled cheese for the kids; butternut squash and turmeric soup for me (recipe will be posted tomorrow if this comes out okay!) and side salad.
Tuesday: Chicken enchiladas, black beans and peppers and onions.
Wednesday: Vegan lasagna (still looking for a recipe if anyone knows of a great one!)
Thursday: Crock pot Kahlua Pork with rice and mixed veggies.
Friday: Chef Daddy – I will be chaperoning a Girl Scout camping weekend!
Saturday: Chef Daddy
Sunday: Dinner out- I will be recovering from a Girl Scout camping weekend!
