The last week of school starts tomorrow. I cannot believe we have another school year in the books. Adjusting to a summer schedule with my crew can take a while.  While they are able to go hours at school without eating, when they are home the pantry and fridge become a feeding trough and they want to eat ALL DAY!!! So my meal plan this week includes not only our dinners but some snack and lunch ideas as well.

Meal Plan

Monday- Grilled burgers/hot dogs, sweet potatoes and salad

Tuesday- Roast chicken with this Israeli couscous salad

Wednesday- Ground turkey and zucchini pesto I shared here

Thursday- Salmon, roasted asparagus and new potatoes

Friday- Arroz con Pollo

Saturday- Low Country Boil (husband’s request!)

Veggies

Cold tortellini salad

Muffins- Banana Oat Muffins and Apple Carrot Zucchini Muffins

Mini pizzas

Peanut butter and apple sandwiches

I hope to maintain our 80/20 balance this summer. I need their growing bodies to be fueled with wholesome homemade goodness so when they want to drink Pringles I can get a  good laugh!
