As a busy mom, I’m always on the hunt for a well rounded meal that can be prepared in that little bit of time between dance practice and soccer or Brownies and date nights. Last week I quickly threw this meal together and it was a family hit.

1. Grass fed sirloin steak- seasoned with salt, pepper and this Belgium- Style White Ale Seasoning from McCormick.

2. Zucchini, sweet mini peppers, and onions chopped then tossed with olive oil, salt, pepper and garlic.

3. Organic sweet potatoes

The plan was to throw everything on the grill but time got away from us. So I broke out my double burner cast iron griddle. If you don’t have one…get one. They are amazing.

So I fired up that bad boy, tossed the veggies in another pan, and the sweet potatoes in the microwave.

Seared both sides of the sirloin, reduced heat and cooked until medium. About 5 minutess.

Cooked the vegetables through, popped the sweet potatoes out of the microwave and topped with some Kerrygold butter and salt.

Easy peasy, less than 15 minutes to the table. A well balanced, responsibly sourced, family friendly meal. Take that McDonalds!
