This meal is definitely “You must try at least one bite”. Then it was a five out of six family stamp of approval! My oldest is the one stronghold in our family who refuses to join the crew and our love of fish and seafood. Without further ado, here’s a super healthy meal that took less than 30 minutes to prepare.
(Trout, tilapia, cod)
Bunch of organic asparagus
1.5 pounds of organic red potatoes
Slices of lemon
Salt & Pepper
1. Preheat the oven to 400 degrees
2, Scrub potatoes, quarter and throw in a pot of boiling water
3, Line 2 cookie sheets with foil- asparagus goes on one with a drizzle of olive oil, salt and garlic
4, Place fish on second cookie sheet. Sprinkle with garlic, salt, dill, and lay lemon slices over top
5, Throw both asparagus & fish into the oven. Cook for 25 minutes.
6. Drain potatoes, top with a smear of butter.
There you have it! To be honest, my oldest ate some fish sticks in place of the trout.
